Egg-cellent…

One of my favorite, quick types of sandwiches to make is the Egg Salad sandwich. Boil some eggs, throw in a couple of ingredients and you have a meal in minutes.

Since I don’t measure anything, the recipe is as follows:

2-3 eggs
About half cup of mayo
Small can of chopped black olives
About half a teaspoon of mustard

Boil the eggs for about ten minutes. Run them under cold water to cool them down and also to stop them from cooking. Peel the eggs and chop them up. Add the mayo and stir. Add the olives and mustard and stir. Typically I don’t add more mayo to my bread because there’s already a bunch in the mixture, but if you really like mayo… go for it. You can always add a lettuce leaf to your bread for some texture or just spread the mixture onto your bread and eat it that way.

With that in mind, I did a little search for “egg salad” to see how other people make it and found Martha Stewart’s version:

6 hard-boiled eggs, peeled and roughly chopped
1/4 cup Homemade Mayonnaise , or prepared mayonnaise, plus more for spreading
1/2 teaspoon dry mustard powder, or 3/4 teaspoon Dijon mustard
3 tablespoons diced celery
Salt and freshly ground black pepper
1/4 teaspoon mild Madras curry powder(optional)
1 8-inch round bread loaf, cut in half crosswise
Dijon mustard for spreading (optional)
1 small head radicchio
1 small bunch arugula

1. In a medium bowl, combine eggs, mayonnaise, mustard powder, celery, salt and pepper to taste, and curry powder, if using. Gently mix until combined.
2. Spread the inside of the bread halves with a layer of mayonnaise and mustard, if using. Line the bottom half with radicchio and arugula leaves, and top with the egg salad. Cover with the top half, and cut the sandwich into wedges. Serve immediately.

Dang. That sounds complicated. My theory is that if it takes you longer to MAKE the sandwich than it takes to eat it, you’re on the wrong track. The day I start making my own mayonnaise is the day I’ll throw myself in front of a bus. Ugh. It’s probably tasty, but the whole reason I like making this is because it’s easy and QUICK.
